You know when you make something and it just works. You had no idea if the combination would be good but you were hopeful and it was just knock it out of the park good!? Well this soup was that. I love cauliflower by itself. But wow… didn’t realize the flavor pop you would get when you added a small amount of corn. That touch of sweetness really brought a good mix into the heartiness of the cauliflower.
INGREDIENTS:
- 1 head of cauliflower
- ¼ bag of organic sweet corn
- Thyme
- black pepper
- Vegetable broth or water
HOW TO CREATE:
You can actually do this dish one of two ways to get slightly different flavors. I love the intensity of having baked foods so this is what I prefer. But you can also boil or steam the cauliflower and get an equally fantastic soup.
Option 1:
- Preheat oven to 400 °F.
- Break apart the cauliflower into small chunks and put in oven safe dish with some water and bake for 30-40 minutes until soft.
- Boil the sweet corn for 5 minutes until done.
- Allow both to cool slightly. Add ¼ cup of vegetable broth (or plain filtered water) that you have heated up or it can be cold as well to your food processor or vitamix blender.
- Add both the corn and the cauliflower and mix until creamy mixture. Add thyme and black pepper! That’s it!!!
Option 2:
- Break apart the cauliflower into small chunks and add to your steamer. Steam for 15-20 minutes until almost done. When you feel there is only around 5-10 minutes left, add the sweet corn and steam with the cauliflower.
- Allow both to cool slightly. Add ¼ cup of vegetable broth (or plain filtered water) that you have heated up or it can be cold as well to your food processor or vitamix blender. Add both the corn and the cauliflower and mix until creamy mixture. Add thyme and black pepper!
