I love salads! Love, love finding new combinations for salads. For me butter lettuce or red romaine is just divine as the base and then adding all types of fabulousness is always a good option. I sometimes like the impression that I am getting something heavier in the salads. I will use grilled or sauté or baked vegetables to compliment. I always add in some beautiful seeds or nuts as well.

INGREDIENTS:

  • Red romaine lettuce
  • Watermelon Radish
  • Kumquats
  • Avocado
  • Sauté zucchini wedges and king trumpet mushrooms
  • Hemp seeds
  • Water or vegetable broth

HOW TO CREATE:

Saute the mushrooms in a tiny bit of water or vegetable broth. 5-7 minutes as the mushrooms become slightly cooked, add the zucchini wedges and cook until slightly translucent. It depends ultimately how well you like your vegetables cooked. I like mine not shriveled. Having some firmness to them. Add all the ingredients together. I usually add the red romaine with the sliced kumquats and radishes with a squeeze of lemon all over it. Then add the mushrooms and zucchini on top for the presentation.
